Is there any way how to organize Someday/Maybe items? Folder structure (as projects) or categories for example.

Sorry, none that I know of.

The Someday/Maybe items are not readily actionable but are good enough to keep for processing at a later date. For example, "I want to learn Spanish" is an excellent Someday/Maybe item that will require you (if you don't know Spanish, that is) to build a project around this idea and create individual action items.

To that end, what you throw into the Someday/Maybe view are quasi-processed collected thoughts that you don't really know what to do with.

Like all things related to GTD, you must review them regularly to be of any use. If you don't, then the Someday/Maybe items become something of a nuisance. Collected, but not processed; reviewed but not actionable. It breaks GTD, in a way.

For me, I use the Someday/Maybe items as collected processed thoughts that I cannot take action on but plan to take action on "someday". I don't bother recording "maybe" items. Maybe is too wishy-washy for me and doesn't mean anything. All my "someday" items I plan to get around to but not for a long period of time. I collect them so I don't have to loose them. Simple enough, but this is my process and it works well for me. Might not be of much use to you.
